Mini Bacon and Egg Muffins

INGREDIENTS


  • 6 eggs
  • ¼ cup heavy cream
  • Salt and freshly ground pepper, to taste
  • 8 slices HORMEL® NATURAL CHOICE® bacon, cooked according to package directions
  • ½ cup shredded sharp Cheddar cheese
  • Chopped fresh chives

DIRECTIONS


Heat oven to 350°F. Grease 24 cups in mini muffin pan. In medium bowl, whisk eggs, cream, salt and pepper until well combined.                                                                                                                                                                                                                                                                                                                                                                                                                                                          
Tear bacon slices into ½-inch pieces. Divide bacon among muffin cups. Sprinkle with cheese. Divide egg mixture between each muffin cup. Bake 20 minutes or until set. Sprinkle with chives. Makes 24.
