Spicy Bacon Guacamole

INGREDIENTS


  • 2 ripened avocados, cut in half and pitted
  • 1 tablespoon sour cream
  • 1 tablespoon fresh lime juice
  • ½ small red onion, finely chopped (about 1/4 cup)
  • 2 jalapeo peppers seeded, if desired and chopped
  • 1 plum tomato, seeded and chopped
  • ¼ cup chopped fresh cilantro leaves
  • 6 strips HORMEL® BLACK LABEL® Premium Maple Black Pepper Bacon, cooked and chopped, divided
  • Blue corn tortilla chips
  • Garnishes: bacon, cooked and chopped, tomato, seeded and chopped

DIRECTIONS


Scoop avocado into medium bowl.  Add sour cream and lime juice. Coarsely mash with a fork until combined. Stir in onion. Add next 4 ingredients. Season with salt to taste. Garnish, if desired.
Serve with blue corn tortilla chips.
