Ingredients
| 12 | large hardboiled eggs |
| ½ | cup mayonnaise |
| ½ | cup finely chopped HORMEL® BLACK LABEL® Canadian bacon |
| 2 | tablespoons capers |
| 2 | tablespoons chives, chopped |
| 1 | tablespoon white wine vinegar |
| 2 | teaspoons sugar |
| ¼ | teaspoon kosher salt |
| Garnish: chopped HORMEL® BLACK LABEL® Canadian bacon, chives |
Directions
Slice eggs in half lengthwise.
Remove yolks, keeping whites intact. In medium bowl, mash yolks with fork. Stir in mayonnaise and next 6 ingredients.
Spoon or pipe yolk mixture into egg white halves.
Top with finely chopped Canadian bacon and chives, if desired.
