Teriyaki Sausage Stir-fry

1 tablespoon vegetable oil, divided
1 carrot, sliced diagonally into ¼-inch-thick pieces
1 yellow onion, cut into thin wedges
1 cup snow peas
1 red bell pepper, cut into strips
1 (12-ounce) package smoked sausage

Hot, cooked brown rice


  1. In skillet or wok, heat 1 teaspoon oil over medium-high heat. Add carrot and onion; stir-fry 3 minutes or until vegetables are crisp and tender. Remove from skillet.

  2. Add 1 teaspoon oil to skillet. Add snow peas and bell pepper; stir-fry 2 minutes. Remove from skillet.

  3. Add remaining 1 teaspoon oil to skillet. Add sausage; stir-fry 3 minutes. Return stir-fried vegetables to skillet. Add teriyaki sauce. Cook, stirring, until heated thoroughly. Serve with hot rice.
