Ingredients
1 | tablespoon vegetable oil, divided |
1 | carrot, sliced diagonally into ¼-inch-thick pieces |
1 | yellow onion, cut into thin wedges |
1 | cup snow peas |
1 | red bell pepper, cut into strips |
1 | (12-ounce) package smoked sausage |

Hot, cooked brown rice |
Directions
In skillet or wok, heat 1 teaspoon oil over medium-high heat. Add carrot and onion; stir-fry 3 minutes or until vegetables are crisp and tender. Remove from skillet.
Add 1 teaspoon oil to skillet. Add snow peas and bell pepper; stir-fry 2 minutes. Remove from skillet.
Add remaining 1 teaspoon oil to skillet. Add sausage; stir-fry 3 minutes. Return stir-fried vegetables to skillet. Add teriyaki sauce. Cook, stirring, until heated thoroughly. Serve with hot rice.
