This chicken salad sandwich is easy to make and perfect for a satisfying meal on-the-go or at home.
Ingredients
| 2 | (5-ounce) cans VALLEY FRESH® 100% Natural* Chicken Breast, well drained |
| ⅓ | cup finely chopped red and/or yellow bell pepper |
| ¼ | cup finely chopped red onion |
| ¼ | cup chopped roasted cashews |
| ¼ | cup plain Greek yogurt |
| 3 | tablespoons mayonnaise |
| 1 | tablespoon finely chopped fresh dill |
| 1 | teaspoon hot pepper sauce |
| ½ | teaspoon grated lemon peel |
| Coarse salt and freshly ground pepper to taste |
Directions
Mix chicken, bell pepper, onion and cashews in a medium bowl. Stir in yogurt, mayonnaise, dill, hot pepper sauce, lemon peel, salt and pepper until well blended.
Serve in sandwiches, on flatbread or a salad on greens or stuffed into a large tomato.
