Ingredients

 
1 pound orzo, cooked according to package directions
¾ cup lemon vinaigrette
1½ cups chopped roasted sweet peppers
8 ounces mozzarella cheese, preferably fresh, cut into ½-inch pieces
4 cups chopped baby arugula leaves
2 cups chopped radicchio
½ cup HORMEL® Real Bacon Bits
½ cup pine nuts, toasted

Directions

  1. In large bowl, combine hot orzo and vinaigrette; toss. Let stand until room temperature, stirring occasionally. Add peppers, cheese, arugula, radicchio, bacon and toasted pine nuts to orzo mixture. Toss well.
