Skillet Chili Mac ‘n’ Cheese 

Skillet Chili Mac ‘n’ Cheese

INGREDIENTS


  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 jalapeño pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 2 (15-ounce) cans HORMEL® Chili with Beans
  • 8 ounces rigatoni pasta, uncooked
  • 1 (15-ounce) can diced tomatoes, undrained
  • 2 cups beef or vegetable broth
  • 1 cup shredded Mexican blend cheese
  • Suggested toppings: Sour cream, fresh cilantro, extra cheese, sliced fresh chilies and sliced red onion.

DIRECTIONS


  1. In large skillet over medium heat, heat oil.  Add onion and jalapeño pepper. Cook 3 to 4 minutes or until onion is translucent. Stir in garlic, cumin and salt.  Cook 1 minute.
  2. Add chili, pasta, undrained tomatoes and broth. Bring mixture to a boil; reduce heat to medium-low.  Simmer 12 to 15 minutes or until pasta is tender, stirring occasionally. Stir in cheese.
  3. Serve with suggested toppings.
