|¾||cup fresh corn kernels|
|¼||cup chopped green onion|
|¼||cup melted butter|
|4||slices HORMEL® BLACK LABEL® bacon, cooked and crumbled|
|2||tablespoons chipotle peppers in adobo sauce, minced|
|Maple syrup, if desired|
|Garnish: cooked and crumbled HORMEL® BLACK LABEL® bacon, fresh chives|
In large bowl, combine cornmeal mix and next 6 ingredients.
Prepare griddle for medium heat. Spoon ¼ cup of mixture onto hot griddle and cook 2 to 3 minutes. Flip and cook 2 minutes.
Serve maple syrup over corn cakes. Garnish with chopped, cooked bacon, if desired.
