4 large baking potatoes
¼ cup butter, melted
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
1½ cups shredded cheddar cheese
½ cup HORMEL® Real Bacon Bits
Garnish: chopped green onions


  1. Heat oven to 400°F.

  2. Pierce each potato with fork. Bake potatoes directly on oven rack 50 minutes or until easily pierced with a knife. Let stand 10 minutes. Cut potatoes in half lengthwise. Scoop out center of potato, leaving about ¼ inch intact. Reserve potato flesh for another use.

  3. Brush both sides of potato skins with butter. Season both sides with salt and pepper.

  4. Place potato skins on a baking sheet, skin sides up and broil 2 to 3 minutes or until crisp. Flip skins and broil 2 to 3 minutes or until lightly browned.

  5. Divide cheese and bacon bits evenly among skins and broil additional 2 minutes or until cheese has melted. Garnish with green onions, if desired.
