Ingredients
4 | large baking potatoes |
¼ | cup butter, melted |
1 | teaspoon kosher salt |
½ | teaspoon freshly ground pepper |
1½ | cups shredded cheddar cheese |
½ | cup HORMEL® Real Bacon Bits |
Garnish: chopped green onions |
Directions
Heat oven to 400°F.
Pierce each potato with fork. Bake potatoes directly on oven rack 50 minutes or until easily pierced with a knife. Let stand 10 minutes. Cut potatoes in half lengthwise. Scoop out center of potato, leaving about ¼ inch intact. Reserve potato flesh for another use.
Brush both sides of potato skins with butter. Season both sides with salt and pepper.
Place potato skins on a baking sheet, skin sides up and broil 2 to 3 minutes or until crisp. Flip skins and broil 2 to 3 minutes or until lightly browned.
Divide cheese and bacon bits evenly among skins and broil additional 2 minutes or until cheese has melted. Garnish with green onions, if desired.
