Mini Pumpkins
Mini pumpkins, as desired
Pumpkin Spice Chili
1 tablespoon olive oil
½ cup onion, chopped
½ teaspoon ground pumpkin pie spice
2 (15-ounce) cans HORMEL® Chili
½ cup cubed pumpkin


For the Mini Pumpkins

  1. Heat oven to 400°F.

  2. Place whole pumpkins on a lightly greased baking sheet, stems up.

  3. Bake 20 minutes.

  4. Let stand 10 minutes.

  5. Cut stem off and scoop out seeds.

For the Pumpkin Spice Chili

  1. In large saucepan heat oil over medium heat.

  2. Sauté onion 7 to 9 minutes or until translucent.

  3. Add pumpkin pie spice and cook 1 minute.

  4. Stir in chili and pumpkin.

  5. Bring mixture to a boil; reduce heat and simmer 20 minutes or until pumpkin is tender.
