Ingredients

 
1 tablespoon vegetable oil
¼ cup finely chopped onion
2 garlic cloves, minced
1 tablespoon grated fresh ginger
1½ teaspoons curry powder
½ teaspoon cumin
½ teaspoon salt
1 (15-ounce) can diced tomatoes, undrained
1 (15-ounce) package HORMEL® SQUARE TABLE™ Roasted Chicken Breast with Rib Meat and Gravy, shredded
Hot cooked basmati rice
Lemon wedges
Cilantro
Plain yogurt, if desired

Directions

  1. In large skillet over medium-high heat, heat oil. Add onions, garlic and ginger. Cook 2 to 3 minutes or until softened. Add curry powder, cumin and salt. Cook 1 minute. Add tomatoes. Cook 5 to 7 minutes. Stir in shredded chicken and gravy. Cook 3 to 5 minutes or until heated thoroughly.

  2. Serve curry over rice. Garnish with lemon wedges, cilantro and a dollop of yogurt, if desired.
