This chicken salad sandwich is easy to make and perfect for a satisfying meal on-the-go or at home.
|2||(5-ounce) cans VALLEY FRESH® 100% Natural* Chicken Breast, well drained|
|⅓||cup finely chopped red and/or yellow bell pepper|
|¼||cup finely chopped red onion|
|¼||cup chopped roasted cashews|
|¼||cup plain Greek yogurt|
|1||tablespoon finely chopped fresh dill|
|1||teaspoon hot pepper sauce|
|½||teaspoon grated lemon peel|
|Coarse salt and freshly ground pepper to taste|
Mix chicken, bell pepper, onion and cashews in a medium bowl. Stir in yogurt, mayonnaise, dill, hot pepper sauce, lemon peel, salt and pepper until well blended.
Serve in sandwiches, on flatbread or a salad on greens or stuffed into a large tomato.
