Breakfast Bacon Burrito

  • 12 large eggs
  • 2 cups shredded Mexican cheese blend, divided
  • 1 (3-ounce) jar HORMEL® Real Bacon Bits, divided
  • 2 tablespoons butter or margarine
  • 6 CHI-CHI’S® 8-inch Flour Tortillas
  • 1 cup CHI-CHI’S® Thick & Chunky Salsa


1. In large bowl, stir together eggs, 1¼ cups cheese and ½ cup bacon bits.
2. In large nonstick skillet, melt butter over medium heat. Add egg mixture; cook, stirring frequently, 5 to 8 minutes or until  eggs are set but still moist.
3. Meanwhile, wrap tortillas in plastic wrap. Microwave on HIGH (100%) 30 to 60 seconds or until warm.
4. Spoon egg mixture down center of warm tortillas. Top each  with salsa and remaining ¾ cup cheese and bacon bits. Roll up tortillas burrito-style. Serve immediately.
