Grilled Tomatoes with Pepperoni

INGREDIENTS
  • 3 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 4 tomatoes, sliced in half
  • 1 cup 3-cheese blend of Parmesan, Asiago, and Romano 
  • 16 slices HORMEL® Pepperoni
  • 1 tablespoons dried thyme
Oil grill and set on high heat. In bowl, combine olive oil and garlic.
Place tomatoes face down on grill. Grill 4 to 5 minutes.
Turn tomatoes over and spoon olive oil mixture into tomatoes. Continue to grill 3 minutes.
Remove from grill and place on parchment paper lined baking sheet.
Place 2 tablespoons cheese on tomato. Press some of the cheese down in the cavity of the tomato.
Place 2 pepperoni slices on top of each tomato.
Sprinkle thyme over tops of tomatoes.
Broil tomatoes for 2 to 3 minutes or until cheese melts and pepperoni is hot.
Serve immediately.
