Ham and Quiche Cups

5 large eggs, lightly beaten
1 cup milk
¼ cup chopped green onion
½ teaspoon dried thyme
¼ teaspoon kosher salt
1/8 teaspoon freshly ground pepper
2 ¼ ounces HORMEL® NATURAL CHOICE® Cooked Deli Ham
1 ½ cup shredded Swiss cheese


Heat oven to 350°F.
In medium bowl, whisk together eggs and next 5 ingredients.
Coat 2 standard muffin tins with cooking spray. Place 1 ham slice in each of 18 cups. Spoon about 3 tablespoons egg mixture into each ham slice. Divide cheese evenly among 18 cups.
Bake 20 to 25 minutes or until eggs are set. Cover with foil if excessive browning occurs.
Recipe Notes
Make ahead and freeze options: Make quiche filling ahead and freeze in sealed plastic zip-top freezer bag until ready to use. Or, once cooked, place ham cups in sealed plastic zip-top freezer bags and store in freezer.
To reheat, microwave on HIGH at 30 second intervals until heated through.
