Ingredients
1 | tablespoon light olive oil |
1 | (20-ounce) package JENNIE-O® Extra Lean Ground Turkey |
1 | cup shredded carrots |
1 | green bell pepper, diced |
1 | cup diced zucchini |
1 | cup diced yellow summer squash |
½ | cup diced onion |
3 | cups water |
1 | tablespoon HERB-OX® Beef Bouillon Cubes |
1 | tablespoon Italian seasoning |
1 | (16-ounce) jar CHI-CHI’S® Thick & Chunky Salsa |
1 | (15-ounce) can pinto beans, drained and rinsed |
1 | (15-ounce) can kidney beans, drained and rinsed |
½ | cup ditalini pasta |
Directions
In large skillet, heat oil over medium heat. Add turkey; cook until browned. Add carrots, bell pepper, zucchini, summer squash and onion; cook 5 minutes or until onion is softened.
In slow cooker, combine turkey and vegetables. Stir in water, bouillon and Italian seasoning; add pasta, salsa and beans. Cover; cook 4 hours on low heat setting.
