1 tablespoon light olive oil
1 (20-ounce) package JENNIE-O® Extra Lean Ground Turkey
1 cup shredded carrots
1 green bell pepper, diced
1 cup diced zucchini
1 cup diced yellow summer squash
½ cup diced onion
3 cups water
1 tablespoon HERB-OX® Beef Bouillon Cubes
1 tablespoon Italian seasoning
1 (16-ounce) jar CHI-CHI’S® Thick & Chunky Salsa
1 (15-ounce) can pinto beans, drained and rinsed
1 (15-ounce) can kidney beans, drained and rinsed
½ cup ditalini pasta


  1. In large skillet, heat oil over medium heat. Add turkey; cook until browned. Add carrots, bell pepper, zucchini, summer squash and onion; cook 5 minutes or until onion is softened.

  2. In slow cooker, combine turkey and vegetables. Stir in water, bouillon and Italian seasoning; add pasta, salsa and beans. Cover; cook 4 hours on low heat setting.
