3 large peppers (red, yellow, and orange), quartered and seeded
1 (14-ounce) can HORMEL® Plant-Based Chili With Beans
½ cup frozen corn, thawed
¼ cup jalapeno slices, divided
½ cup shredded Mexican cheese blend
Sour cream and chopped green onions for serving


  1. Heat oven to 375°F. Lightly spray large baking sheet with nonstick cooking spray.

  2. Arrange pepper sections cut sides up, on prepared sheet.

  3. In small saucepan, over medium heat, combine chili, corn and ½ of the jalapeno slices. Cook 3 to 5 minutes or until warmed through. Spoon mixture onto pepper pieces. Sprinkle with cheese. Bake 10 to 12 minutes, or until cheese melts. Serve topped with sour cream, chopped green onions and remaining jalapeno slices.
