1 (16-ounce) container cottage cheese
1 cup HORMEL® CURE 81® Diced Boneless Ham
8 eggs
2 cups shredded gruyere cheese, divided
2 tablespoons cornstarch
2 teaspoons hot sauce
¼ teaspoon salt
¼ teaspoon freshly ground pepper


  1. Heat oven to 300°F. Lightly spray a nonstick 12-cup muffin pan with nonstick cooking spray. Set a large baking pan filled halfway up with boiling water on lowest rack.

  2. In bowl of food processor place cottage cheese. Process 60 to 90 seconds or until whipped smooth. Add eggs, 1½ cups cheese, cornstarch, hot sauce, salt and pepper. Process 30 to 45 seconds or until smooth.

  3. Divide egg mixture evenly among each well in muffin pan, filling them almost to the top. Sprinkle with ham and remaining cheese. Bake for 25 to 30 minutes or until set. Let set in pan 5 minutes before carefully removing.
