Ingredients

2 cups cherry tomatoes, halved
2 tablespoons prepared pesto
1 tablespoon olive oil
1 tablespoon balsamic glaze, plus more for serving
Kosher salt and black pepper
1 (12-ounce) package HORMEL® SQUARE TABLE® Flame Seared Chicken Breasts
3 basil leaves, plus more for serving
3 slices fresh mozzarella

Directions

  1. Heat broiler to HIGH.

  2. In small bowl, combine tomatoes, olive oil, pesto, and 1 tablespoon balsamic glaze . Season with a pinch of salt and pepper. Set aside.

  3. In broiler safe skillet, place chicken breasts. Top each piece of chicken with a large basil leaf and a slice of fresh mozzarella. Transfer to the broiler. Broil 4 to 5 minutes, or until mozzarella is melted.

  4. Remove skillet from oven. Top with tomato mixture. Drizzle with additional balsamic glaze and garnish with additional basil.
