Ingredients
| 1 | tablespoon vegetable oil |
| ¼ | cup finely chopped onion |
| 2 | garlic cloves, minced |
| 1 | tablespoon grated fresh ginger |
| 1½ | teaspoons curry powder |
| ½ | teaspoon cumin |
| ½ | teaspoon salt |
| 1 | (15-ounce) can diced tomatoes, undrained |
| 1 | (15-ounce) package HORMEL® SQUARE TABLE™ Roasted Chicken Breast with Rib Meat and Gravy, shredded |
| Hot cooked basmati rice | |
| Lemon wedges | |
| Cilantro | |
| Plain yogurt, if desired |
Directions
In large skillet over medium-high heat, heat oil. Add onions, garlic and ginger. Cook 2 to 3 minutes or until softened. Add curry powder, cumin and salt. Cook 1 minute. Add tomatoes. Cook 5 to 7 minutes. Stir in shredded chicken and gravy. Cook 3 to 5 minutes or until heated thoroughly.
Serve curry over rice. Garnish with lemon wedges, cilantro and a dollop of yogurt, if desired.
