Prepare this delicious salad the night before to make lunch a breeze. Featuring peapods, red onion, celery, carrots, chicken, pasta and salted cashews in a sweet and tangy sauce.
Ingredients
| 2 | cups rotini |
| 1 | cup fresh peapods, cut into 1-inch pieces |
| 2 | (10-ounce) cans HORMEL® Premium Chicken Breast, drained and flaked |
| 1 | cup sliced celery |
| ½ | cup chopped red onion |
| ½ | cup shredded carrot |
| 1 | cup mayonnaise |
| ½ | cup packed brown sugar |
| 1 | tablespoon cider vinegar |
| 1 | teaspoon salt |
| 1 | cup salted cashews |
Directions
Cook rotini according to package directions, adding peapods during last 2 minutes of cooking; drain. Cool.
In large bowl, toss together rotini mixture, chicken, celery, onion and carrot.
In separate bowl, combine remaining ingredients except cashews; toss with salad. Refrigerate several hours or overnight. Stir in cashews before serving.
