6 ounces baby spinach
pinch of kosher salt
8 small or 4 large CHI-CHI’S® Tortillas
8 ounces mozzarella cheese, grated
1 (10-ounce) can HORMEL® chicken breast
1 cup CHI-CHI’S® Salsa


  1. 1. Heat ¼ cup water in a large pan over medium heat. Add spinach, sprinkle with salt and cover. Cook for approximately 5 minutes, stirring occasionally, until spinach is wilted.

    2. Drain spinach in a colander, rinse with cold water and squeeze out excess water. Set aside.

    3. Spray skillet with cooking spray and heat over medium-high heat. Place a tortilla in the hot pan and evenly sprinkle a thin layer of cheese over half the tortilla. Spread thin layer of spinach and chicken over the other half of the tortilla. Cook 30 to 40 seconds to let the cheese melt slightly.

    4. Carefully fold the tortilla in half, creating a half-circle shape, and cook 30 seconds longer on each side, until cheese is melted and meat is heated through. Repeat with remaining tortillas.

    Serve with salsa.
