BBQ Pulled Pork Sweet Potato Bites

SERVINGS: Makes 10 servings

INGREDIENTS


  • 2 to 3 pounds HORMEL® Barbecue Seasoned Pork Roast
  • 4 ounces goat cheese, softened
  • ¼ cup cream cheese, softened
  • 3 tablespoons olive oil, divided
  • 2 large sweet potatoes, peeled and cut into -inch slices
  • ¾ cup sliced green onions

DIRECTIONS


  1. Cook pork according to package directions. Shred pork using two forks, leaving pork in cooking liquid.
  2. In small bowl mix, add goat cheese and cream cheese. Blend until cheese has a whipped appearance.
  3. Heat oven to 425°F.
  4. Line two baking sheets with aluminum foil and brush 1 tablespoon olive oil over foil.
  5. Add sliced sweet potatoes in a single layer to each baking sheet.
  6. Brush remaining 2 tablespoons olive oil on tops of sweet potato slices.  Season with salt. Bake 10 minutes, rotate pans. Bake an additional 10 minutes, or until slightly crispy. Assemble sweet potato bites: sweet potato slice, goat cheese, shredded pork. Sprinkle with green onions. Serve immediately.
