Fiesta Pork and Squash Soup

INGREDIENTS


  • 1 pound HORMEL® Original Pork Loin Filet, cut into 1-inch cubes
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 medium onion, chopped
  • 1 tablespoon canola oil
  • 3 cups reduced-sodium chicken broth
  • ½ small butternut squash, peeled and cubed
  • 2 medium carrots, sliced
  • 1 can (14.5 ounces) diced tomatoes with mild green chilies, undrained
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano

DIRECTIONS


  1. Season pork with salt and pepper. In a large skillet, heat oil over medium-high and brown pork in 2 batches. Transfer pork to a 5-quart slow cooker and add remaining ingredients. Cover and cook on low 8 hours.
