SERVINGS: 4 Servings

TOTAL TIME: 25 minutes

  • 1 pound HORMEL® Honey Cooked Ham, sliced extra thick, diced
  • 1 cup uncooked white rice
  • 2 cups vegetable stock
  • 2 tablespoons sesame oil
  • ½ cup fresh or frozen green peas
  • 1 cup diced pineapple
  • 2 tablespoons sugar
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • ¼ cup soy sauce
  • 1 tablespoon Sriracha sauce
  • 2 large eggs, well beaten
  •  ½ cup toasted cashews

1. In medium saucepan, cook rice in stock according to package directions.
2. Meanwhile, in large skillet, heat oil over medium heat. Add peas, ham and pineapple. Cook 3 to 5 minutes or until heated through.
3. Stir cooked rice into ham mixture.  Add sugar, pepper, garlic powder, soy sauce and Sriracha sauce, stirring.
4. Make a small well in center of pan by pushing rice to the sides.
5. Pour in egg; cook 1 minute without stirring, then stir egg gently, avoiding rice mixture. When egg is fully cooked, stir into rice mixture.
