Pork Tacos

INGREDIENTS


  • 1 teaspoon ground red pepper
  • 1 (1.5-pound) package HORMEL® Lemon Garlic Pork Loin Filet, cubed 
  • 1 teaspoon ground cumin
  • ½ teaspoon freshly ground pepper
  • ½ teaspoon ground coriander 
  • ½ teaspoon crushed red pepper flakes
  • ¼ cup olive oil, divided
  • ½ medium red onion, diced
  • 1 large tomato, seeded and diced  
  • 2 jalapeos, chopped
  • 2 tablespoons lime juice
  • Kosher salt and pepper to taste
  • ¼ cup chopped fresh cilantro leaves
  • 8 (6-inch) flour tortillas

DIRECTIONS


  1. In small bowl, combine ground red pepper and next 4 ingredients. Sprinkle evenly over pork, stirring until well coated.
  2. In large Dutch oven, heat 2 tablespoons oil. Cook half of pork until browned. Repeat with remaining oil and pork.
  3. In medium bowl, combine onion, tomato, jalapeño and lime juice. Season with salt and pepper to taste. Stir in cilantro. 
  4. Heat tortillas according to package directions. Serve pork and tomato mixture in tortillas.
