Uncured Sandwich Pepperoni Italian Sub

INGREDIENTS




Marinated Red Onions
  • 1 small red onion, sliced into rings
  • ½ cup olive oil
  • 1 tablespoon red wine vinegar
  • 2 teaspoons dried oregano
  • 2 teaspoons balsamic vinegar
  • ¼ teaspoon salt

DIRECTIONS


1. In bowl of food processor, place mayonnaise, peppers and salt. Process until completely combined. Set aside.
2. Spread cut sides of rolls with mayonnaise mixture. Layer 2 cheese slice halves on one side of each roll. Layer salami, ham and pepperoni on other side of each roll.
3. Broil 5 to 7 minutes or until cheese is melted, bread is toasted and pepperoni is beginning to crisp.
4. Top with arugula and Marinated Red Onions. Sandwich together.

Marinated Red Onions
1. In bowl, combine ingredients. Let stand at room temperature, stirring occasionally, 1 hour or until onions are softened. Store in refrigerator.
