Canadian Bacon-Beer-Cheese Fritters

Ingredients

 
½ cup baking mix
½ cup yellow cornmeal
½ (6-ounce) package HORMEL® BLACK LABEL® Canadian bacon slices, chopped
2 ounces Monterey jack cheese with peppers
1 tablespoon chopped chipotle peppers in adobe sauce
¼ cup grated white onion
fluid ounce amber beer
1 egg, lightly beaten
teaspoon salt
Canola oil for frying

Directions

  1. In large bowl, combine baking mix and next 8 ingredients, until blended.

  2. Pour oil to depth of 2 inches in large skillet or medium saucepan. Heat oil to 325° F.

  3. Drop batter by level tablespoonfuls, gently into hot oil and cook, 2 to 3 minutes or until golden and cooked through, turning often.

  4. Drain on paper towel lined rack. Serve immediately.
