Prepare this delicious salad the night before to make lunch a breeze. Featuring peapods, red onion, celery, carrots, chicken, pasta and salted cashews in a sweet and tangy sauce.
|1||cup fresh peapods, cut into 1-inch pieces|
|2||(10-ounce) cans HORMEL® Premium Chicken Breast, drained and flaked|
|1||cup sliced celery|
|½||cup chopped red onion|
|½||cup shredded carrot|
|½||cup packed brown sugar|
|1||tablespoon cider vinegar|
|1||cup salted cashews|
Cook rotini according to package directions, adding peapods during last 2 minutes of cooking; drain. Cool.
In large bowl, toss together rotini mixture, chicken, celery, onion and carrot.
In separate bowl, combine remaining ingredients except cashews; toss with salad. Refrigerate several hours or overnight. Stir in cashews before serving.
