Prepare this delicious salad the night before to make lunch a breeze. Featuring peapods, red onion, celery, carrots, chicken, pasta and salted cashews in a sweet and tangy sauce.

2 cups rotini
1 cup fresh peapods, cut into 1-inch pieces
2 (10-ounce) cans HORMEL® Premium Chicken Breast, drained and flaked
1 cup sliced celery
½ cup chopped red onion
½ cup shredded carrot
1 cup mayonnaise
½ cup packed brown sugar
1 tablespoon cider vinegar
1 teaspoon salt
1 cup salted cashews


  1. Cook rotini according to package directions, adding peapods during last 2 minutes of cooking; drain. Cool.

  2. In large bowl, toss together rotini mixture, chicken, celery, onion and carrot.

  3. In separate bowl, combine remaining ingredients except cashews; toss with salad. Refrigerate several hours or overnight. Stir in cashews before serving.
