|1||pound HORMEL® Original Pork Loin Filet, cut into 1-inch cubes|
|1||medium onion, chopped|
|1||tablespoon canola oil|
|3||cups reduced-sodium chicken broth|
|½||small butternut squash, peeled and cubed|
|2||medium carrots, sliced|
|1||can (14.5 ounces) diced tomatoes with mild green chilies, undrained|
|1||tablespoon chili powder|
|1||teaspoon ground cumin|
|1||teaspoon dried oregano|
Season pork with salt and pepper. In a large skillet, heat oil over medium-high and brown pork in 2 batches.
Transfer pork to a 5-quart slow cooker and add remaining ingredients. Cover and cook on low 8 hours.
