Pulled Pork Sweet Potato Bites

BBQ Pulled Pork Sweet Potato Bites are like little nests of deliciousness. Creamy, cheesy goodness is layered with HORMEL® Pork Roast and garnished with a pop of color. The sweet potato rings add another touch understated of sweetness and create the perfect vessel for the other ingredients.

2 to 3 pounds HORMEL® Pork Roast
4 ounces goat cheese, softened
¼ cup cream cheese, softened
3 tablespoons olive oil, divided
2 large sweet potatoes, peeled and cut into -inch slices
¾ cup sliced green onions


  1. Cook pork according to package directions. Shred pork using two forks, leaving pork in cooking liquid.

  2. In small bowl mix, add goat cheese and cream cheese. Blend until cheese has a whipped appearance.

  3. Heat oven to 425°F.

  4. Line two baking sheets with aluminum foil and brush 1 tablespoon olive oil over foil.

  5. Add sliced sweet potatoes in a single layer to each baking sheet.

  6. Brush remaining 2 tablespoons olive oil on tops of sweet potato slices.  Season with salt. Bake 10 minutes, rotate pans. Bake an additional 10 minutes, or until slightly crispy.

  7. Assemble sweet potato bites: sweet potato slice, goat cheese, shredded pork. Sprinkle with green onions. Serve immediately.
