BBQ Pulled Pork Sweet Potato Bites are like little nests of deliciousness. Creamy, cheesy goodness is layered with HORMEL® Pork Roast and garnished with a pop of color. The sweet potato rings add another touch understated of sweetness and create the perfect vessel for the other ingredients.
|2 to 3 pounds HORMEL® Pork Roast|
|4||ounces goat cheese, softened|
|¼||cup cream cheese, softened|
|3||tablespoons olive oil, divided|
|2||large sweet potatoes, peeled and cut into -inch slices|
|¾||cup sliced green onions|
Cook pork according to package directions. Shred pork using two forks, leaving pork in cooking liquid.
In small bowl mix, add goat cheese and cream cheese. Blend until cheese has a whipped appearance.
Heat oven to 425°F.
Line two baking sheets with aluminum foil and brush 1 tablespoon olive oil over foil.
Add sliced sweet potatoes in a single layer to each baking sheet.
Brush remaining 2 tablespoons olive oil on tops of sweet potato slices. Season with salt. Bake 10 minutes, rotate pans. Bake an additional 10 minutes, or until slightly crispy.
Assemble sweet potato bites: sweet potato slice, goat cheese, shredded pork. Sprinkle with green onions. Serve immediately.
