|½||cup diced red bell pepper|
|2||cups chopped fresh spinach|
|3||pounds Fontina cheese, cubed|
|½||(8-ounce) package NATURAL CHOICE® Smoked Deli Ham, coarsely chopped|
Heat broiler. In a medium bowl, whisk eggs and whipping cream.
In a 10-inch broiler proof skillet, heat butter and olive oil over medium heat. Add the red bell pepper and spinach and sauté 2 to 3 minutes, or until crisp-tender.
Pour the egg mixture over the peppers and spinach and cook 3 to 5 minutes or until eggs start to set.
Sprinkle with cheese cubes and top with ham. Cook 2 to 3 minutes or until frittata is almost set but the top is still runny.
Transfer the skillet to broiler. Broil 5 minutes or until golden brown and top is set. Let rest 5 minutes before cutting.
