2 tablespoons brown sugar
1 tablespoon gochugaru Korean chili powder
2 teaspoons Kosher salt
1 teaspoon cumin
1 teaspoon garlic powder
½ teaspoon ground mustard
½ teaspoon black pepper
1 rack HORMEL® ALWAYS TENDER® St. Louis Style Spareribs
1 cup HOUSE OF TSANG® Korean BBQ Stir-Fry Sauce
Suggested accompaniments: Sesame seeds, chopped green onions, chopped cilantro, additional HOUSE OF TSANG® Korean BBQ Stir-Fry Sauce, hot cooked rice and pickled cucumber salad

Directions

  1. Set smoker to 225°F.

  2. In small bowl, combine brown sugar, salt, gochugaru, cumin, ground mustard and black pepper.

  3. Remove membrane from back of rib rack. Trim ribs of excess fat. Rub rack liberally with rub mixture.

  4. Smoke ribs 4 to 5 hours, or until an internal temperature of 185°F is reached and pork is very nearly falling off of the bone.

  5. During last ½ hour of cooking time, baste top with Korean BBQ sauce. Continue smoking to caramelize sauce.

  6. Serve ribs with suggested accompaniments.
