Slow-Cooker Pork with Noodles

Slow-Cooker Pork with Noodles

INGREDIENTS


  • 1 (1-pound) package HORMEL® Teriyaki Pork Tenderloin
  • 3 cups low-sodium chicken broth
  • ¼ cup HOUSE OF TSANG® ginger flavored soy sauce
  • 2 tablespoons seasoned rice vinegar
  • 4 garlic cloves, sliced
  • 1 (2-inch) piece ginger, peeled and sliced
  • 2 pieces star anise
  • 2 cups baby bok choy, coarsely chopped
  • 3 ½ ounces dried rice vermicelli noodles
  • ½ cup chopped fresh cilantro

DIRECTIONS


  1. Combine chicken broth and next 5 ingredients in a 5-quart slow cooker. Add pork, cover and cook on low 6 hours. Remove pork and shred. Return pork to slow cooker.
  2. Add bok choy; cover and cook 20 more minutes.  Add noodles, making sure they are submerged. Cover and cook 10 more minutes.
  3. Stir in cilantro.
