|1||cup mashed potatoes|
|1||large egg, lightly beaten|
|1¾||cups baking mix|
|1||cup finely chopped HORMEL® CURE 81® Classic Boneless Ham|
|½||teaspoon kosher salt|
|4||tablespoons butter, melted|
|2||tablespoons chopped fresh chives|
In medium bowl, whisk together mashed potatoes, milk and egg. Stir in baking mix, ham and salt until just blended. Gently fold in butter and chives.
Heat griddle to medium heat. Drop batter using a ¼ cup. Cook until golden brown. Flip and cook until cooked through. Serve with sour cream.
