INGREDIENTS


  • 3 cups chopped peeled seeded tomatoes
  • 1 cup CHI-CHI'S® Thick & Chunky Salsa
  • 1 cup tomato or vegetable juice
  • 1 cup boiling water
  • 1/2 cup chopped peeled seeded cucumber
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped yellow bell pepper
  • 2 tablespoons snipped fresh basil or 1 teaspoon dried basil leaves
  • 1 tablespoon mild olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons HERB-OX® Beef Granulated Bouillon
  • 1/4 teaspoon hot sauce
  • Croutons, if desired

DIRECTIONS


1. In large bowl, combine all ingredients except croutons; mix well. Cover; refrigerate several hours or overnight.
2. To serve, ladle soup into chilled bowls or mugs. Top each serving with croutons.
