Fiesta Chicken Chili

SERVINGS: 6 servings

INGREDIENTS


  • ½ cup oil
  • 2 corn tortilla shells, cut into thin strips
  • 2 (10-ounce) cans HORMEL® Premium Chicken breast, drained
  • 2 (14-ounce) cans white beans, drained
  • 1 (14-ounce) can cut corn, drained
  • 1 (10-ounce) can diced tomatoes and green chilies
  • 1 (7-ounce) can diced green chilies
  • 1 (14-ounce) can chicken broth
  • 2 cups shredded pepper jack cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • Salt and pepper to taste

DIRECTIONS


  1. In skillet over medium heat, heat oil until hot but not smoking. Add tortilla shells and deep-fry until golden brown and crisp. With a slotted spoon, remove from pan and drain on paper towels.
  2. In large pot over medium heat, combine chicken, white beans, corn, diced tomatoes and chilies, diced green chilies and chicken broth. Add cheese, cumin, chili powder and cayenne pepper. 
  3. Cook until mixture is hot and cheese is melted, stirring occasionally. Ladle into bowls and top with tortilla strips. Serve hot.
