Honey Dijon & Orange Pork Salad
SERVINGS:

INGREDIENTS
1 (24-ounce) package
HORMEL® Honey Mustard Pork Loin Filet
1 large head green leaf lettuce, torn into bite-size pieces
1 (11-ounce) can mandarin oranges, drained
¼ cup slivered almonds, toasted
Honey Dijon Salad Dressing (see recipe below)
DIRECTIONS
1. Prepare pork according to package directions.
2. Divide evenly and arrange lettuce and oranges on individual serving plates.
3. Thinly slice pork. Place on greens. Drizzle with dressing. Sprinkle with almonds.
Honey Dijon Dressing:
In small bowl, mix together ¼ cup orange juice, 2 tablespoons cider vinegar, 2 tablespoon extra virgin olive oil, 1 tablespoon grated orange peel, 2 teaspoons honey, 2 teaspoons Dijon mustard, and ½ teaspoon black pepper.
